Ingredients:

  • CRUST:
  • 1 cup (2 sticks) butter, softened
  • 2 cups packed brown sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 3 cups oats
  • FILLING:
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 (14-oz) can sweetened condensed milk
  • 2 Tbsp. butter
  • 1/2 cup chopped walnuts (optional)
  • 2 tsp. vanilla extract

Instructions:

  1. Preheat oven to 350°F.

  2. CRUST:

  3. In a very large mixing bowl beat butter and sugar together with an electric mixer. Add eggs and vanilla, mixing until combined. Add flour and baking soda and mix until combined. Stir in the oats. Press two-thirds (about 3 1/3 cups) into an ungreased 15x12x1-inch baking pan. Set remainder aside.

  4. FILLING:

  5. In a medium saucepan heat chocolate chips, sweetened condensed milk, and the butter over low heat until chocolate is just melted, stirring occasionally. Remove from heat. Stir in walnuts and vanilla. Spread the chocolate mixture on top of the crust.

  6. TOPPING:

  7. Drop the remaining oat mixture in rounded teaspoonfuls on top of the chocolate later. Bake about 25 minutes, or until the top is light golden (chocolate layer will look moist). Cool in pan on a wire rack. Cut into bars.
