These are BIG cookies, so be careful not to eat a whole lot of them at once, if you can resist! They have a lot of different ingredients in them, which is what makes them so delicious, but you can always change them up with other ingredients if you don’t like any of these, but really, they are just downright delicious. And big enough for a cowboy, or cowgirl! Enjoy!

Servings: 3 1/2 dozen large cookies

Ingredients:

  • 3 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1 Tbsp baking soda
  • 1 Tbsp ground cinnamom
  • 1 tsp salt
  • 1 1/2 cups (3 sticks) butter, softened
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups packed light brown sugar
  • 3 large eggs
  • 1 Tbsp vanilla extract
  • 3 cups chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups unsweetened flake coconut
  • 2 cups (8-oz) chopped, toasted pecans

Instructions:

  1. Preheat oven to 350°F.

  2. Sift flour, baking powder, baking soda, and cinnamon and salt into a bowl; set aside. In a very large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, and combine thoroughly. Add eggs, one at a time, beating after each addition. Beat in vanilla. Stir in the flour mixture until just combined. Stir in chocolate chips, oats, coconut, and pecans. For each cookie, drop 1/4 cup dough (a large cookie scoop) onto ungreased baking sheet, spacing 3-inches apart. Bake for 15-17 minutes, until edges are lightly browned; rotate sheet halfway through. Remove cookies from rack to cool.
