I make this herb butter for a number of things. I’ll put it under the skin in my turkey or chicken before I roast them. I spread it on bread for sandwiches, especially turkey sandwiches. It’s also great on toast with eggs. And you can melt it and brush it on your pizza dough, especially the edges, before you bake pizza. If at all possible, use fresh herbs, their flavor is more robust than dried herbs.

Ingredients:

  • 1/2 cup (1 stick) butter, softened
  • 1 Tbsp. chopped fresh rosemary (or 1 tsp. dried)
  • 1 Tbsp. chopped fresh sage (or 1 tsp. dried)
  • 1 Tbsp. chopped fresh thyme (or 1 tsp. dried)

Instructions:

  1. Mix all ingredients and form into a log. Wrap in plastic wrap and refrigerate for at least 1 hour, or until chilled.

  2. If using in a turkey or chicken. Cut 1/4-inch slices out of the logs and put under the skin. You can also melt a small portion of it and brush over the top of the skin as well.
