These Mini Phyllo Quiches are packed full of tons of flavor. I make these for tea parties and they are always eaten quickly. Even my little grandson Gabe, who is our server at our Mother-Daughter tea parties, loves them and can’t get enough of them. They are easy to make and you can make the filling ingredients the day ahead of time to save some time.

They also make great little bite sized appetizers and tapas, perfect for a Bridal Shower, holiday get together, and more.

Servings: 30 mini quiches

Ingredients:

  • 2 eggs
  • 1/2 cup evaporated milk
  • 1/4 tsp fresh basil, finely chopped
  • 1/4 tsp. fresh parsley, finely chopped
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. white pepper or cayenne pepper
  • 2 packages (15 count each) mini Phyllo Shells (found in the freezer section of the grocery store)
  • 1/2 cup shredded Swiss or Gruyere Cheese
  • 1/3 cup cooked, crumbled bacon
  • 2 Tbsp mined green onion
  • 2 Tbsp minced red bell pepper

Instructions:

  1. Preheat oven to 350°F. Place phyllo shells on a parchment lined rimmed baking sheet.

  2. Lightly beat together the eggs, milk, basil, parsley, salt, garlic powder, and pepper.

  3. Into each phyllo shell place 1 teaspoon of cheese, 1/2 teaspoon bacon, and 1/4 teaspoon each of onion and red pepper.

  4. Immediately before baking spoon about 1 Tablespoon egg/milk mixture into phyllo shells. Bake in a preheated oven for 12-15 minutes. Serve warm or at room temperature.
