I make these Sausage Roll Ups for a holiday appetizer. My oldest daughter loves these, so I often assign the task of making them to her. They are always a hit, but how can you go wrong with anything wrapped in bacon, right?!

Ingredients:

  • SAUSAGE BALLS:
  • 1/2 cup (1 stick) butter
  • 1 cup water
  • 3 cups dry herb stuffing mix
  • 1/2 lb. bulk, hot Italian sauce, raw
  • 2 egs, beaten
  • 1 lb. bacon
  • MUSTARD DIPPING SAUCE:
  • 1 cup mayonnaise
  • 3 Tbsp sour cream
  • 1 Tbsp Dijon mustard
  • 1 Tbsp white vinegar
  • 2-6 drops Tbasco sauce, depending on how how you want it
  • 1 medium clove garlic, crushr

Instructions:

  1. SAUSAGE BALLS:

  2. In a skillet melt butter and add water, heating to boiling, remove from heat. In a large bowl put in the stuffing mix and add the butter and water, raw sausage, and eggs. Mix thoroughly. Chill for 1 hour or easier handling.

  3. Preheat oven to 375°F. Cover a cookie sheet with foil and place a rack on the cookie sheet and spray with non-stick cooking spray.

  4. Shape sausage mixture into small balls about the size of a walnut. Cut bacon slices in half and wrap each ball in bacon halves, securing with toothpicks. Place bacon-wrapped sausage balls on baking rack and bake for 35-40 minutes, turning halfway. Serve with Mustard Dipping Sauce.

  5. MUSTARD DIPPING SAUCE:

  6. Combine all sauce ingredients together and mix well. Chill and serve with Sausage Rolls. I often make this sauce a day or two ahead of time.
